Why does my wheat bread come out crumbly?
I make bread sometimes. I enjoy doing it by hand, none of that bread machine crap. My white and focaccia breads always comes out nice, but the wheat always seems to fall apart when I cut it; a lot of crumbs. What can I do to fix this? I use the recipe from the Good Housekeeping cookbook (12th edition, the big red checkered cookbook).
I do lots of bread baking as well.
What I have found is to use mollasses or honey instead of white/brown sugar.
Another thing to try, is for your liquid, try using yogurt. And for more flavor, fruit flavored yogurt.
