Healthy, budget friendly recipes?

A group of nursing students are creating a healthy, budget friendly cookbook for elderly adults living in a senior apartment community. We are all contributing recipes that meet the previously mentioned criteria. I’ve come up with a few ideas on my own and I’m headed to Barnes and Noble today to see if I can find any recipes there but I’m hoping to get more recipes. Thank you!

It’s hard because since they are older most of them are on restricted diets..which makes it impossible to cater to every ones needs.

here’s mine southwestern salad

lettuce cut up
canned corn sprinkled on
tomato,onion cilantro cut up and layered on..
hard boiled eggs
bacon crunchies
black beans

1 piece of chicken breast grilled on george foreman.

Now mix ranch and avacado together for dressing..

1 can of cresent rolls
sliced ham
swiss cheese
bake as roll directions say
then heat on stove peach preserves and use as dipping sauce.
this can be done as wrap if they dont want 6 rolls like the pack carries..
